In plate armor the European knight would actualy be at a distinct disadvantage in that they'd hardly be able to move and would tire out quickly. And plate armor was created more because it was believed it would allow a knight to withstand a gunshot. If you want the knight to have a shot, then their wearing chainmail or the heavier scalemail.
